Brazilian Stewed Tomato & Okra (Tomate com Quiabo) Recipe
Tomate com quiabo (stewed tomato and okra) is a delicious Brazilian dish, and one of my favorite ways to eat okra!
Ingredients:
- 1 TB Olive Oil
- 1 small Onion, chopped
- 1 clove Garlic, diced
- 1 tsp Hot Chili Pepper, diced
- 2 large Tomatoes (peel and chop)
- 1/4 tsp Oregano, chopped
- 1 pound Okra, cut into 1/2″ rounds
- Salt and Pepper to taste
Instructions:
1. Heat 1/2 TB of olive oil in a pan over medium heat.
2. Saute the onion for 1 minute, add the garlic and pepper and cook for 1 more minute.
3. Add the tomatoes and oregano and cook for 10 minutes (stirring occasionally).
4. In another pan, heat 1/2 TB of olive oil over medium heat and cook the okra for 10 minutes. Stir constantly so the okra won’t burn.
5. Add the okra to the tomato pan and add salt and pepper to taste.
