Brazilian Couve (Kale) Recipe

If you have never tried kale, this is a simple dish that is easy and tastes great.  You can also try this recipe with collard greens instead of kale for a change of pace.

Ingredients:
- 1.5 pounds Kale (wash and dry)
- 1 TB Olive Oil
- salt and pepper to taste

Directions:
1.  Remove the stems and inner ribs of the kale leaves (this may be easier if you fold the kale leaves in half first).
2.  Stack several leaves on top of each other and roll a tight cigar shape.  Then julienne the leaves by cutting strips / rings off of the cigar.
3.  Heat a frying pain with the oil over medium heat.
4.  Add the kale, salt and pepper.  Cook until right before it will wilt.  The color should remain the same and the couve (kale) should have a bit of a crunch to it.
