Brazilian Cheese Croquettes (Croquetes de Queijo) Recipe

In Brazil, Croquetes de Queijo (Cheese Croquettes) are served as appetizers, snacks and even for breakfast or with tea.  Your friends will be impressed that you made this dish, but its super easy!

Ingredients:
– 1.5 cups Flour
– 1 cup Parmesan Cheese, grated
– 6 TB Unsalted Butter, room temperature chunks
– 1 large Egg, separated
– 1 cup Bread Crumbs
– salt and pepper to taste

Instructions:
1.  Preheat the oven to 350 degrees F.  Grease a baking sheet.
2.  Mix together the flour, butter, cheese, egg yolk, salt and pepper in a mixer (low speed).  Be careful not to over-beat the dough, it should be grainy rather than pasty.
3.  Create walnut-size balls from the mixture.
4.  Whisk the egg white until it is very frothy.
5.  Dip the cheese balls into the frothed egg white and roll the balls in bread crumbs.
6.  Put the cheese croquettes (croquetes de queijo) on your greased baking sheet.
7.  Bake for 25 minutes or until golden brown.  Serve Hot!!!
